Description
Enjoy all the flavors of a classic Caesar salad wrapped in a soft flour tortilla. Perfect for a quick lunch or a light dinner!
Ingredients
- Wraps:
- 2 cups cooked chicken, shredded or chopped
- 3 Roma tomatoes, seeded and diced
- Romaine lettuce leaves
- 1/2 cup freshly grated Parmesan
- 1/4 cup croutons, coarsely chopped
- 4 (10-inch) flour tortillas
- Caesar Dressing:
- 2 small garlic cloves, minced
- 1 tsp anchovy paste
- 2 tbsp freshly squeezed lemon juice (from 1 lemon)
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1 cup mayonnaise
- 1/2 cup freshly grated Parmesan
- 1/4 tsp salt
- 1/4 tsp freshly ground black pepper
Instructions
- Make the Dressing: In a small bowl, whisk together garlic, anchovy paste, lemon juice, Dijon mustard, Worcestershire sauce, mayonnaise, Parmesan, salt, and black pepper until well combined. Store in the fridge for up to 1 week.
- Assemble the Wraps: Lay tortillas flat and spread 2 tablespoons of Caesar dressing in the center of each.
- Add romaine lettuce, 1/2 cup chicken, diced tomatoes, chopped croutons, and a sprinkle of Parmesan to each tortilla.
- Wrap & Serve: Fold in the sides of the tortilla, roll tightly, and slice in half. Serve immediately with chips or extra dressing on the side.
Notes
- Use rotisserie chicken for a fast and flavorful shortcut.
- Swap flour tortillas for whole wheat or spinach wraps if desired.
- Store leftover components separately to keep wraps fresh for meal prep.
- Optional: Add crispy bacon or avocado for extra flavor.
