Description

These Cherry Pie Bars are a simple and delicious dessert made with a soft cookie-like base, sweet cherry pie filling, and a light glaze. Perfect for holidays, potlucks, or any time you need an easy treat that slices beautifully and serves a crowd.


Ingredients

  • For the Bars:
  • 1 cup unsalted butter (2 sticks), softened
  • 2 cups sugar
  • 1 teaspoon salt
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • 3 cups all-purpose flour
  • 2 (21 oz) cans cherry pie filling
  • For the Glaze:
  • 1 cup powdered sugar
  • ½ teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 23 tablespoons milk


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 15x10x1-inch baking pan.
  2. In a large bowl, cream together the butter, sugar, and salt until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Mix in vanilla and almond extracts.
  4. Gradually add flour to the mixture and mix until combined.
  5. Spread about 3 cups of the dough into the prepared baking pan.
  6. Evenly spread cherry pie filling over the dough layer.
  7. Drop remaining dough by teaspoonfuls over the cherry filling.
  8. Bake for 30–35 minutes, or until golden brown. Cool completely in the pan on a wire rack.
  9. For the glaze: In a small bowl, mix powdered sugar, vanilla extract, almond extract, and milk until smooth and pourable. Drizzle over cooled bars.
  10. Slice and serve. Enjoy!

Notes

  • You can substitute cherry pie filling with any flavor you prefer (apple, blueberry, etc.).
  • Bars can be made ahead and frozen. Just thaw and glaze before serving.
  • Let bars cool fully before glazing to prevent melting the icing.
  • Use parchment paper for easier removal and cleanup.
