Sweet Potato Layer
- 3 lbs sweet potatoes, peeled
Sauce
- 2 tbsp avocado oil
- 2 shallots, diced

- 1 tsp dried thyme
- 1 tsp salt
- 1/4 tsp black pepper
- 1/4 cup almond milk (or regular milk)
Topping
- 6 oz Gruyere cheese, shredded
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and grease an 8×11-inch baking dish to prevent sticking.
- Slice Sweet Potatoes: Peel and slice the sweet potatoes very thinly, approximately 1/8 inch thick. Arrange the slices closely together, overlapping slightly, in the prepared casserole dish.
- Make the Sauce: In a saucepan, heat the avocado oil over medium-high heat. Add the diced shallots and cook for about two minutes until starting to soften. Stir in minced garlic, nutmeg, dried thyme, salt, and pepper and cook for an additional 4-5 minutes until the mixture is fragrant and the shallots are softened.
- Add Almond Milk: Remove the saucepan from heat and stir in the almond milk, mixing well to combine all the flavors.
- Pour Sauce over Potatoes: Evenly pour the spiced almond milk mixture over the layered sweet potatoes in the baking dish.
- Add Cheese: Sprinkle the shredded Gruyere cheese evenly on top of the potatoes and sauce.
- Bake Covered: Cover the dish with aluminum foil and bake in the preheated oven for 40 minutes.
- Bake Uncovered: Remove the foil and continue baking for an additional 20 minutes to allow the top to set and the potatoes to cook through.
