Description

These Cheesy Garlic Chicken Wraps are a quick and delicious meal perfect for lunch or a light dinner. Filled with a savory mixture of tender cooked chicken, garlic, and a creamy blend of light mayonnaise, yogurt, and hot sauce, then wrapped in tortillas with melted cheddar cheese and green onions. Pan-toasted until golden and crispy for a satisfying crunch.

Ingredients

Wraps

  • 2 large tortillas (regular or low-carb/high-protein)

Chicken Filling

  • 7 oz cooked chicken (about 200 grams, chopped; rotisserie chicken works great)
  • 2 garlic cloves (minced or grated, adjust to taste)
  • 2 tablespoons light mayonnaise
  • 1 tablespoon light Greek yogurt (or plain yogurt)
  • 2 teaspoons hot sauce (like Frank’s)
  • ¼ teaspoon salt
  • 3 oz grated cheese (about 90 grams; cheddar blend used)
  • 1 green onion (chopped)
  • Olive oil spray for cooking

Instructions

  1. Mix chicken filling: In a bowl, combine the chopped cooked chicken, minced garlic, light mayonnaise, light Greek yogurt, hot sauce, and salt. Mix well until all ingredients are evenly incorporated to create a creamy, flavorful filling.
  2. Lay out wrap: Place a tortilla flat on a clean surface. On the lower third of the tortilla, sprinkle about 2 tablespoons of grated cheese evenly.
  3. Add chicken mixture: Spoon approximately two-thirds of a cup of the prepared chicken filling on top of the cheese layer. Then add another tablespoon of grated cheese over the chicken, followed by a sprinkle of chopped green onion for a fresh bite.
  4. Fold wrap: Fold the sides of the tortilla inward, then roll it up tightly from the bottom to enclose the filling securely.
  5. Prepare pan: Heat a non-stick pan over medium-high heat. Lightly spray the pan with olive oil to prevent sticking and promote crisping.
  6. Cook wraps: Place the wraps seam-side down in the hot pan. Cook for 3 to 4 minutes on each side, pressing gently, until the wraps are golden brown and crispy. Cover the pan with a lid during cooking to help heat the filling through evenly.
  7. Serve: Remove the wraps from the pan and slice in half diagonally. Serve immediately while hot and crispy.

Notes

  • Use rotisserie or leftover cooked chicken to save time.
  • Adjust garlic and hot sauce amounts based on your spice preference.
  • For a lower-carb version, choose low-carb or high-protein tortillas.
  • Covering the pan while cooking helps melt the cheese inside and warms the filling through.
  • You can substitute cheddar with any cheese that melts well, like mozzarella or Monterey Jack.
  • If you want extra crispiness, brush the wrap with a little olive oil before cooking.
