- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) to ensure it’s ready for baking the quinoa bites.
- Prep Veggies: Place the chopped broccoli and grated carrot into a blender or food processor and blend until they are finely chopped, creating a uniform mix of vegetables.
- Mix Ingredients: In a large bowl, combine the finely chopped veggies, cooked quinoa, eggs, shredded cheddar cheese, and salt (if using). Stir until all ingredients are thoroughly mixed.
- Fill Muffin Tins: Spray two mini muffin tins with cooking spray. Divide the quinoa mixture evenly among the muffin cups. Using a small cookie scoop can help distribute evenly. Press down firmly in each cup so the bites hold together well.
