Description

Quick, crispy, and packed with flavor — these broccoli fritters are perfect as a snack, side dish, or even a light lunch!


Ingredients

  • 4 cups broccoli florets
  • ½ cup shredded cheddar cheese
  • ¼ cup shredded mozzarella cheese
  • ¼ cup all-purpose flour
  • 2 large eggs, beaten
  • ½ tsp dried oregano
  • ½ tsp paprika
  • ½ tsp salt
  • Pinch of black pepper

Instructions

  1. Steam the Broccoli: Steam broccoli florets for 4–5 minutes until just tender. Drain and chop finely.
  2. Mix Ingredients: In a large bowl, combine chopped broccoli, cheddar, mozzarella, flour, eggs, oregano, paprika, salt, and pepper. Mix until well combined.
  3. Form Patties: Heat a non-stick skillet over medium heat and lightly grease with oil or nonstick spray. Scoop about ¼ cup of the mixture per fritter into the pan and flatten slightly.
  4. Cook: Fry each fritter for 3–4 minutes per side, or until golden brown and crispy.
  5. Drain and Serve: Transfer fritters to a plate lined with paper towels. Serve warm with your favorite dipping sauce.

Notes

  • Use a food processor to finely chop steamed broccoli quickly.
  • Fritters can be made ahead and reheated in a skillet or oven.
  • Try dipping in sour cream, ranch, or spicy mayo.
