Quick, crispy, and packed with flavor — these broccoli fritters are perfect as a snack, side dish, or even a light lunch!
Ingredients
- 4 cups broccoli florets
- ½ cup shredded cheddar cheese
- ¼ cup shredded mozzarella cheese
- ¼ cup all-purpose flour
- 2 large eggs, beaten
- ½ tsp dried oregano
- ½ tsp paprika
- ½ tsp salt
- Pinch of black pepper
Instructions
- Steam the Broccoli: Steam broccoli florets for 4–5 minutes until just tender. Drain and chop finely.
- Mix Ingredients: In a large bowl, combine chopped broccoli, cheddar, mozzarella, flour, eggs, oregano, paprika, salt, and pepper. Mix until well combined.
- Form Patties: Heat a non-stick skillet over medium heat and lightly grease with oil or nonstick spray. Scoop about ¼ cup of the mixture per fritter into the pan and flatten slightly.
- Cook: Fry each fritter for 3–4 minutes per side, or until golden brown and crispy.
- Drain and Serve: Transfer fritters to a plate lined with paper towels. Serve warm with your favorite dipping sauce.
Notes
- Use a food processor to finely chop steamed broccoli quickly.
- Fritters can be made ahead and reheated in a skillet or oven.
- Try dipping in sour cream, ranch, or spicy mayo.
- For gluten-free, substitute flour with almond flour or oat flour.
