Cheeseburger Tater Tot Casserole combines classic cheeseburger flavors with crispy tater tots and a creamy homemade cheese sauce. It’s a comforting and family-friendly dinner that’s easy to double or triple for a crowd.
Ingredients
- 1 pound lean ground beef
- ⅓ cup diced yellow or sweet onion
- ⅔ cup ketchup
- 2 tablespoons yellow mustard
- 2 tablespoons dill or sweet pickle relish
- ½ teaspoon salt
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 ½ cups milk
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 2 cups shredded cheddar cheese, divided
- 32 ounces tater tots
Instructions
- Preheat oven to 350°F. Butter or spray a 2-quart casserole dish with nonstick spray.
- In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned. Drain excess fat.
- Stir in ketchup, mustard, relish, and ½ teaspoon salt. Mix well, taste, and adjust seasoning if needed.
- Spread the beef mixture evenly into the prepared casserole dish.
- In a medium saucepan over medium heat, melt butter. Whisk in the flour and cook, whisking constantly, until the roux is golden brown.
- Gradually whisk in the milk and cook until the sauce thickens and bubbles, about 5 minutes. Season with ¼ teaspoon salt and pepper.
- Remove from heat and stir in 1 ½ cups shredded cheddar cheese until melted and smooth.
- Pour the cheese sauce evenly over the beef mixture in the casserole dish.
- Top with frozen tater tots in an even layer (you may have extra).
- Bake in preheated oven for 35 minutes.
- Remove from oven, sprinkle with remaining ½ cup cheddar cheese, and bake an additional 5 minutes until melted.
- Optional: Garnish with fresh chopped parsley before serving.
Notes
- To prep ahead: assemble casserole without tater tots, cover, and refrigerate up to 1 day. Add tater tots before baking.
- This recipe doubles easily — use a second or larger casserole dish.
- You can use either dill or sweet pickle relish depending on your flavor preference.
- For extra flavor, try mixing in cooked bacon bits or chopped pickles with the meat layer.
