Ingredients

Chickpea Filling

  • 2 (15-ounce) cans chickpeas, drained and rinsed
  • 1/2 cup Frank’s Buffalo Sauce
  • 2 teaspoons agave syrup (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Tortillas and Toppings

  • 12 small corn tortillas (or flour tortillas as preferred)
  • About 1/2 cup vegan ranch dressing
  • Optional toppings: shredded lettuce, diced tomatoes, vegan feta cheese, diced avocado, lime wedges, chopped cilantro


Instructions

  1. Prepare the chickpeas: In a large sauté pan over medium heat, combine the drained and rinsed chickpeas with the buffalo sauce, agave syrup (if using), garlic powder, and onion powder. Stir well to coat all the chickpeas evenly.
  2. Cook the filling: Cook the mixture for about 10 minutes, stirring frequently to prevent sticking and to ensure the chickpeas are heated through and well coated with the sauce.
  3. Warm the tortillas: While the chickpeas cook, warm the tortillas either in a dry skillet, microwave, or oven until soft and pliable.
