Description

These Buffalo Chicken Quesadillas combine tender shredded chicken tossed in spicy buffalo sauce with melted Mexican cheese, all sandwiched between crispy flour tortillas. Perfect for a quick and flavorful appetizer or meal, they are served with ranch dressing and fresh cilantro for a cool, tangy contrast to the heat.


Ingredients

Chicken Mixture

  • 2 cups cooked shredded chicken
  • ½ cup buffalo sauce

Quesadillas

  • 4 tablespoons butter
  • 4 (10-inch) flour tortillas
  • 2 cups shredded Mexican cheese blend

Serving

  • Fresh chopped cilantro, for garnish


Instructions

  1. Prepare the buffalo chicken: In a medium bowl, thoroughly mix the cooked shredded chicken with the buffalo sauce until well coated, ensuring the flavors are evenly distributed.
  2. Heat the skillet and assemble the quesadilla: Place a large skillet over medium heat and add 2 tablespoons of butter. Once melted and sizzling, place one flour tortilla in the skillet. Sprinkle ½ cup of shredded Mexican cheese evenly over the tortilla, then layer half of the buffalo chicken mixture on top.
  3. Add cheese and top tortilla: Sprinkle another ½ cup of shredded Mexican cheese over the chicken, then cover with a second tortilla to form a sandwich. Allow it to cook for about 2 minutes or until the bottom tortilla turns golden brown and crispy.
  4. Flip and cook the other side: Carefully flip the quesadilla using a spatula and cook for an additional 2 minutes until the second side is golden and the cheese inside has melted.
  5. Repeat with remaining ingredients: Remove the cooked quesadilla from the skillet and set it aside. Add the remaining 2 tablespoons of butter to the pan and repeat the process with the remaining tortillas, cheese, and buffalo chicken.
  6. Serve: Cut the quesadillas into wedges and serve hot, garnished with fresh chopped cilantro and ranch dressing on the side for dipping.
