Description

A classic Italian appetizer made with vibrant marinated tomatoes, fresh basil, and garlic served on crispy parmesan toasts—these bruschetta crostinis are easy to make and bursting with flavor, perfect for entertaining or a light snack.


Ingredients

  • For the Tomato Bruschetta:
  • 6 Roma tomatoes (1 1/2 lbs), diced
  • 1/3 cup fresh basil leaves, chopped
  • 5 garlic cloves, minced and divided
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • Balsamic glaze (optional, for serving)
  • For the Crostini Toasts:
  • 1 baguette
  • 3 tablespoons extra virgin olive oil
  • 1/3 cup shredded parmesan cheese

Instructions

  1. Dice tomatoes and drain excess juice.
  2. Slice basil into ribbons and combine with tomatoes.
  3. Mix 1 teaspoon of the minced garlic with the olive oil and set aside. Add the rest of the garlic to the tomatoes.
  4. Season with balsamic vinegar, olive oil, salt, and pepper. Mix gently and let marinate for 15–30 minutes.
  5. Preheat oven to 400°F (200°C). Slice baguette diagonally into 1/2-inch slices.
  6. Place slices on a parchment-lined baking sheet. Brush both sides with garlic-infused olive oil.
  7. Sprinkle tops with parmesan cheese.
  8. Bake for 5 minutes, then broil for 1–2 minutes until golden.
  9. Arrange toasts on a platter. Spoon tomato mixture over just before serving. Drizzle with extra virgin olive oil and balsamic glaze if desired.

Notes

  • Drain excess tomato juice to prevent soggy crostinis.
  • Use fresh basil for the most vibrant flavor.
  • Bake and broil carefully to avoid burning the cheese.
