These Brownie Protein Bites are a delicious and healthy snack option that combines the rich flavors of dates, cocoa, and dark chocolate with the added protein boost. These gluten-free and paleo-friendly bites are easy to make, require no baking, and can be enjoyed as a quick energy boost or dessert alternative.

- 1 cup Medjool dates (about 13 dates), pitted
- 1/3 cup sunflower seed butter
- 1 tsp vanilla bean paste
- 1/3 cup protein powder*
- 1/4 cup cocoa powder
- Pinch of salt
Coating Ingredients
- 1/2 cup dark chocolate
- 1/2 tsp coconut oil
Instructions
- Soften Dates: Remove pits from Medjool dates and soak them in hot water for 5 minutes to soften, making them easier to blend.
- Blend Filling Base: Drain the water from the dates, then add the dates, sunflower seed butter, and vanilla bean paste to a food processor. Blend until the mixture becomes a thick, sticky caramel-like consistency.
- Add Remaining Ingredients: Add protein powder, cocoa powder, and a pinch of salt to the food processor. Blend again, stopping occasionally to scrape down the sides for an even mix.
- Form Balls: Scoop the dough into tablespoon-sized portions and roll them into balls using your hands.
- Chill the Balls: Place the balls on a lined baking sheet and refrigerate or freeze for at least 30 minutes to firm up.
- Melt Chocolate Coating: In a small microwavable dish, combine dark chocolate and coconut oil. Melt on high heat in 20-30 second intervals, stirring in between, until smooth.
- Dip and Set: Dip each chilled ball into the melted chocolate, fully coating it, then place back on the lined baking sheet. Allow the chocolate to set before serving.

- You can substitute the protein powder with your preferred type, such as whey or plant-based options.
- For a nut-free version, sunflower seed butter is used instead of traditional nut butters.
- Store the protein bites in an airtight container in the refrigerator for up to one week or freeze for longer storage.
