This easy, kid-friendly BBQ Chicken Quesadilla is the perfect quick meal for a busy day! With tender shredded chicken, BBQ sauce, and melty cheese, these quesadillas are a flavorful and satisfying dish.
Ingredients
- 1 cup shredded chicken
- ¼ cup BBQ sauce (divided)
- 2 large flour tortillas
- 1½ cups shredded Colby Jack cheese (divided)
- ¼ cup purple onion, thinly sliced
- 2 tbsp fresh cilantro, chopped
Instructions
- Prepare the Chicken: Combine the shredded chicken and 2 tablespoons of BBQ sauce in a small bowl. Warm it in the microwave for 30 seconds to 1 minute, until heated through.
- Heat the Pan: While the chicken heats, place a non-stick pan or griddle over medium-high heat. Once hot, place the tortillas on the pan (you may need to do one at a time depending on the size of your griddle).
- Assemble the Quesadillas: On one side of each tortilla, spread ½ cup of shredded cheese to the edges. Top with ½ of the BBQ chicken, ½ of the purple onion, and ½ of the cilantro. (Optional: drizzle a little extra BBQ sauce on top of the chicken.)
- Add the Remaining Cheese: Sprinkle the remaining cheese over the filling, then fold the tortillas over to enclose the filling.
- Cook the Quesadillas: Let the quesadillas cook on one side until the tortilla is browned and the cheese is melty (about 2-3 minutes). Carefully flip the quesadillas and cook the other side until browned.
- Serve: Remove the quesadillas from the pan and slice them into wedges. Serve warm and enjoy!
