Batter
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 3 ripe bananas
- 1/2 cup melted butter
- 2 cups sugar
- 2 eggs
- 1 teaspoon vanilla flavoring
- 1 cup milk
Crumb Topping & Filling
- 2 cups all-purpose flour
- 2 cups light brown sugar
- 1 cup cold butter, cubed

- 1 cup powdered sugar
- 1-2 tablespoons milk
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and spray a 9 x 13-inch baking dish with nonstick cooking spray to prevent sticking.
- Mix Dry Ingredients: In a medium bowl, combine 2 cups of all-purpose flour, 3 teaspoons of baking powder, and 1 teaspoon of salt. Set aside this flour mixture.
- Mash Bananas and Combine Wet Ingredients: In a separate mixing bowl, mash the 3 ripe bananas thoroughly. Stir in 1/2 cup melted butter until the mixture is well combined.
- Add Sugar, Eggs, and Vanilla: Add 2 cups sugar, 2 eggs, and 1 teaspoon of vanilla flavoring to the banana mixture and mix until smooth.
- Incorporate Flour Mixture and Milk: Alternately stir in the flour mixture and 1 cup of milk, mixing just until all ingredients are incorporated into the batter.
- Prepare Crumb Topping: In a medium bowl, combine 2 cups all-purpose flour, 2 cups light brown sugar, and 1 cup cold cubed butter. Use a fork, pastry cutter, or your hands to mix until coarse crumbs form, resembling sandy texture.
- Layer the Batter and Crumb Mixture: Pour half of the banana batter into the prepared baking dish. Sprinkle half of the crumb topping evenly over the batter. Pour the remaining banana batter over the crumbs, then finish by layering the remaining crumb topping on top.
- Bake: Place the pan in the preheated oven and bake for 50 to 60 minutes or until the center is set and a toothpick inserted comes out clean.
- Prepare Optional Glaze: While the cake cools slightly, whisk together 1 cup powdered sugar and 1-2 tablespoons milk until smooth and drizzle it over the cooled crumb cake for an added sweet finish.
