Description

Delicious and easy-to-make banana and blueberry fritters, perfect for a quick breakfast or snack. These golden fritters combine the natural sweetness of ripe bananas with bursts of juicy blueberries, lightly spiced with cinnamon and fried to a crispy, tender finish in coconut oil.

  • 2 medium small ripe bananas
  • ¼ cup to ½ cup all-purpose flour (plain flour) – buckwheat flour can be used as a gluten-free alternative
  • ¼ cup blueberries
  • ⅛ teaspoon cinnamon (optional)
  • 1 teaspoon coconut oil (for frying)


Instructions

  1. Mash Bananas: In a mixing bowl, mash the ripe bananas thoroughly until smooth but still slightly chunky for texture.
  2. Add Flour and Cinnamon: Stir the flour and cinnamon into the mashed bananas until fully combined into a batter. Adjust the flour quantity to get a thick but scoopable consistency.
  3. Incorporate Blueberries: Gently halve the blueberries and fold them into the batter to evenly distribute while keeping some intact for bursts of flavor.
  4. Heat Frying Pan: Place a medium to large non-stick frying pan over medium/high heat and add the coconut oil. Allow the oil to heat up, then reduce the heat to medium.
  5. Shape and Fry Fritters: Using a tablespoon, drop spoonfuls of the batter into the frying pan and slightly flatten each to form fritters. Fry for about 1 to 2 minutes on the first side until golden brown.
  6. Flip and Continue Frying: Carefully flip the fritters and cook for another 1 to 2 minutes until the other side is also golden and the fritter is cooked through.
  7. Repeat and Serve: Transfer cooked fritters to a plate and repeat the frying steps until all batter is used. Serve warm for best taste.

Notes

  • You can substitute buckwheat flour to make the fritters gluten-free.
  • Cinnamon is optional but adds a nice warm flavor to the fritters.
