  • 1/2 a yellow onion – finely diced
  • 1 1/2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1 lb ground turkey
  • 3 large handfuls spinach
  • 1 lb gnocchi – no need to cook or boil before using in this recipe
  • 28 oz marinara sauce
  • 1 1/2 cups shredded mozzarella cheese


Instructions

  1. Preheat and Sauté Onions: Preheat your oven to 350°F. Heat a large oven-safe skillet over medium heat, add olive oil and diced onions, and sauté for 3 to 4 minutes until soft and fragrant.
  2. Cook Ground Turkey and Seasonings: Add ground turkey to the skillet, breaking it up as it browns. After about 3 minutes, season with salt, black pepper, garlic powder, dried oregano, and dried basil, stirring to combine.
  3. Add Spinach: Place the spinach in the skillet with the turkey and onions, toss to combine, and sauté until the spinach wilts.
  4. Add Gnocchi and Sauce: Turn off the heat, then add the uncooked gnocchi and marinara sauce to the skillet. Toss all the ingredients together to ensure even mixing.
  5. Top with Cheese and Bake: Cover the top evenly with shredded mozzarella cheese. Place the skillet into the preheated oven and bake for 28 to 30 minutes until the cheese is melted and bubbly.
  6. Serve: Remove the skillet from the oven, allow it to cool slightly, and serve warm, garnished with fresh basil if desired.
