Ingredients
- 4 chicken breasts, pounded to an even thickness
- 1 red bell pepper, cut into strips
- 1 green bell pepper, cut into strips
- 1 onion, sliced
- 1 lime
- 1/2 tsp cumin, divided
- 1/2 tsp garlic powder, divided
- Salt and pepper, to taste
- 2 cups Mexican 3 cheese blend
- 10 tortillas (flour or burrito-size)
- Non-stick cooking spray
Instructions
- Preheat oven to 400°F. Spray a large baking sheet with non-stick cooking spray and set aside.
- Season chicken breasts with salt, pepper, 1/4 tsp cumin, and 1/4 tsp garlic powder. Grill over medium heat for 5–6 minutes per side or until cooked through. Remove from grill, cover with foil, and let rest for 5 minutes. Slice into 1/2-inch strips and squeeze juice from half a lime over the chicken. Set aside.
- Heat a cast iron skillet over medium-high heat. Add red and green bell peppers and onion. Cook, stirring only occasionally, until lightly charred and softened.
- Squeeze the remaining lime half over the vegetables and season with 1/4 tsp cumin, 1/4 tsp garlic powder, and salt to taste. Stir to combine and remove from heat.
- Warm tortillas in the microwave until soft and pliable. Divide the chicken, peppers and onions, and cheese evenly among the tortillas.
- Roll each tortilla into a burrito, folding in the sides and rolling tightly. Place seam-side down on the prepared baking sheet. Lightly spray the tops with cooking spray.
- Bake for 10–15 minutes, or until golden brown and crispy.
- Serve with optional toppings such as sour cream, salsa, guacamole, or chopped cilantro if desired.
Notes
- Use leftover grilled chicken or rotisserie chicken to save time.
- Add cooked rice or beans to make the burritos heartier.
- For extra crispiness, broil for the last 1–2 minutes of baking (watch closely).
- Store leftovers in an airtight container and reheat in a toaster oven or air fryer for best texture.
