Description

These avocado refried bean tostadas are packed with veggies, super versatile, ready in under 20 minutes, and a delicious vegan appetizer, snack, or side!


Ingredients

  • ¼ cup diced tomatoes
  • ¼ cup minced cilantro
  • 3 tablespoons finely diced red onion
  • 1 (15-ounce) can vegan refried beans
  • 6 tostada shells
  • ¾ cup shredded lettuce
  • 1 avocado, sliced
  • Vegan parmesan cheese (optional)


Instructions

  1. In a small bowl, mix together the tomatoes, cilantro, and red onion. Set aside.
  2. Spread a layer of refried beans onto each tostada shell gently to avoid breaking the shell.
  3. Top each tostada with shredded lettuce, the tomato mixture, and avocado slices.
  4. Sprinkle with vegan parmesan cheese if using.

Notes

  • If using store-bought tostada shells, warm them in the oven at 350°F for 3–5 minutes to enhance texture and flavor.
  • Finely dicing the vegetables makes topping and eating the tostadas easier and less messy.
  • Spread the refried beans gently to avoid cracking the shells.
