Description

A cozy vegan-friendly mashup of apple pie and cinnamon rolls, this cobbler features fluffy homemade rolls atop a sweet apple pie filling. Baked to golden perfection and finished with a maple glaze, it’s ideal for brunch or dessert.


Ingredients

  • Dough:
  • 1 cup non-dairy milk (cashew, oat, soy, etc.)
  • 1 packet instant (rapid rise) yeast
  • 1 tablespoon brown sugar or coconut sugar
  • 1/4 cup melted and cooled dairy-free butter or coconut oil
  • 2 1/23 cups whole wheat pastry flour or unbleached all-purpose flour
  • 1/4 teaspoon salt
  • Filling:
  • 1/4 cup softened dairy-free butter
  • 1 tablespoon ground cinnamon
  • 3 tablespoons brown sugar or coconut sugar
  • Apple Pie Layer:
  • 1 (16-ounce) jar BakeGood No Added Sugar Apple Pie Filling
  • 1/4 cup brown sugar or coconut sugar
  • Simple Glaze:
  • 2/3 cup powdered sugar
  • 1/2 teaspoon maple extract (or vanilla)
  • 1 tablespoon milk of choice or water

Instructions

  1. Activate the Yeast: Heat non-dairy milk to about 110ºF. Combine with yeast and sugar in a large bowl. Stir and let sit for 10 minutes until foamy.
  2. Make the Dough: Add melted butter. Mix in 1/2 cup flour and salt, then gradually add remaining flour until dough pulls away from the bowl. Knead for 5 minutes using a dough hook. Adjust flour as needed until soft, not sticky.
  3. First Rise: Place dough in an oiled bowl, cover, and let rise for 45 minutes in a warm place until doubled.
  4. Prepare Filling: Mix apple pie filling with additional sugar. Set aside.
  5. Shape Cinnamon Rolls: Roll dough into a 14×9” rectangle. Spread with softened butter, sprinkle with cinnamon and sugar, then roll into a log. Slice into 9 equal rolls.
  6. Assemble Cobbler: Grease a 9×9” baking dish. Spread apple filling evenly in the bottom. Arrange cinnamon rolls on top, spaced slightly apart. Let rise 15–20 minutes.
  7. Bake: Preheat oven to 350ºF. Bake for 20 minutes or until tops are lightly golden.
  8. Glaze: Mix glaze ingredients until smooth. Drizzle over slightly cooled cobbler and serve warm.

Notes

  • Use unbleached all-purpose flour for softer rolls, or whole wheat pastry flour for more fiber.
  • Slice rolls with dental floss for cleaner cuts.
  • Adjust sugar to taste if using sweetened apple filling.
  • Can be made ahead and refrigerated overnight before baking.
