Description

Apple Fritter Cake combines the flavors of an apple fritter without frying. This 8×8 cake features a tender batter filled with apple pie filling and topped with a sweet glaze, making it perfect for breakfast, brunch, or dessert.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup packed brown sugar
  • 1/4 cup (2 ounces or 4 tablespoons) unsalted butter, softened
  • 1 large egg, room temperature
  • 1/4 cup apple butter or applesauce
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream or Greek yogurt
  • 2 cups apple pie filling
  • Glaze:
  • 1 cup powdered sugar, sifted
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F. Lightly grease an 8×8 pan with cooking spray.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large mixing bowl, beat butter and brown sugar on medium-high speed until creamy, about 1–2 minutes.
  4. Scrape down the bowl and beat in egg, apple butter/applesauce, and vanilla extract.
  5. On low speed, add flour mixture alternating with sour cream or Greek yogurt, beginning and ending with flour, mixing until just combined.
  6. Spread half of the batter into the prepared pan. Top with apple pie filling and cover with remaining batter.
  7. Bake 35–40 minutes or until a toothpick inserted in the center comes out clean.
  8. While cooling, prepare glaze by whisking powdered sugar, milk, and vanilla. Spread over the warm cake and allow to harden.
  9. Store covered at room temperature up to 3 days or in the refrigerator up to 5 days.

Notes

  • Use homemade or store-bought apple pie filling as preferred.
  • For extra flavor, add a sprinkle of cinnamon sugar on top before glazing.
  • Ensure the cake has cooled slightly before glazing to avoid a runny glaze.
  • Can be made ahead and stored in the fridge for easy breakfast or dessert.
