Ingredients
Wet Ingredients
- 1/4 cup creamy almond butter
- 1/4 cup unsweetened applesauce
- 1/4 cup pure maple syrup
- 1 large egg
- 2 teaspoons vanilla paste
Dry Ingredients
- 1 cup oat flour*
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1 cup old fashioned oats
Additional Mix-ins
- 1 cup grated apple (such as Honeycrisp or Granny Smith)
- 1/3 cup toasted chopped walnuts*
- 1/4 cup raisins
Instructions
- Preheat and Prepare Baking Sheet: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper to prevent sticking and ensure even baking.
- Mix Wet Ingredients: In a large bowl, whisk together the almond butter, unsweetened applesauce, pure maple syrup, egg, and vanilla paste until the mixture is smooth and well combined.
- Add Dry Ingredients: To the wet mixture, stir in the oat flour, baking soda, kosher salt, ground cinnamon, ground cloves, and ground nutmeg. Mix until just combined to avoid overworking the batter.
- Incorporate Oats and Mix-ins: Fold in the old fashioned oats, grated apples, toasted chopped walnuts, and raisins until evenly distributed throughout the dough.
- Form Cookies: Using a spoon or cookie scoop, drop approximately 2 tablespoons of dough per cookie onto the prepared baking sheet, spacing them evenly.
- Bake: Bake in the preheated oven for 10 to 12 minutes, or until cookies are set but still soft in the center to maintain a tender texture.
- Cool: Remove the baking sheet from the oven and allow the cookies to cool on the sheet for 5 minutes. Then, transfer them to a wire rack to cool completely before serving.
