Ingredients
Salmon
- 3 tablespoons chili crunch
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon sea salt
- 1.5 lbs. raw salmon, deboned and skin removed
- 1.5 tablespoons avocado oil
Edamame Salad
- 4 cups shelled, raw edamame
- 8-10 green onions, sliced diagonally
- 3 teaspoons sesame oil
- 1.5 tablespoons rice vinegar
- 1 teaspoon sea salt
- 3 teaspoons black or white sesame seeds
- Squeeze of fresh lime juice
Other Ingredients
- 2 large avocados, cubed or quartered
- 1/4 cup chopped fresh cilantro
- 4 cups cooked white rice
- Kewpie Mayo for topping
Instructions
- Preheat the Air Fryer: Preheat your air fryer to 400ºF to ensure it’s ready for cooking the salmon bites evenly and quickly.
- Prepare the Marinade: In a large bowl, whisk together chili crunch, honey, rice vinegar, sesame oil, and sea salt until well combined to create a flavorful marinade.
- Marinate the Salmon: Cut the raw, skinless, and deboned salmon into 1 to 1.5-inch cubes. Add salmon cubes to the marinade bowl and toss gently to coat all pieces thoroughly.
- Prepare the Air Fryer Basket: Lightly oil the bottom of the air fryer basket to prevent sticking. Transfer the marinated salmon cubes into the basket in a single layer without overlapping. If necessary, cook in batches. Drizzle the avocado oil evenly over the salmon.
- Cook the Salmon: Air fry the salmon cubes at 400ºF for 6 to 8 minutes, or until the exterior starts to brown and the internal temperature reaches 145ºF according to USDA guidelines, ensuring safe and juicy salmon.
- Prepare the Edamame Salad: While the salmon cooks, combine shelled edamame, sliced green onions, sesame oil, rice vinegar, sea salt, sesame seeds, and a squeeze of fresh lime juice in a bowl. Mix well and set aside.
- Remove and Rest Salmon: Once cooked, carefully remove the salmon bites from the air fryer and set aside to rest briefly.
- Assemble the Bowls: Divide cooked white rice into bowls, top with the air-fried salmon bites, then layer with the edamame salad, cubed avocado, fresh cilantro, and a drizzle of Kewpie mayo. Add extra chili crunch for an added kick if desired.
