Ingredients
Filling
- 2 cups shredded cooked chicken
- 2 (4 oz each) cans green chiles, drained
- 4 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- Salt and pepper to taste
Taquitos
- 12-15 small corn or flour tortillas
- Canola or vegetable pan spray
Optional Toppings
- Sour cream
- Diced tomatoes
- Lime wedges
- Cilantro
Instructions
- Prepare the filling: In a medium bowl, combine the shredded cooked chicken, drained green chiles, softened cream cheese, shredded cheddar cheese, and garlic powder. Season the mixture with salt and pepper to your preference, and mix thoroughly until well blended.
- Warm the tortillas: Heat each tortilla for 15-30 seconds on each side in a large skillet over medium-high heat until warm and pliable. Alternatively, you can microwave the tortillas for 30 seconds to soften them.
- Assemble the taquitos: Spoon about 2 tablespoons of the chicken filling onto each warmed tortilla. Roll each tortilla tightly, ensuring the filling is secure, and place the rolled taquitos seam-side down on a baking sheet or tray to keep them sealed.
- Preheat the air fryer: Set your air fryer to 400°F (204°C) and preheat for 3 minutes. While preheating, spray the air fryer basket generously with pan spray to prevent sticking.
- Air fry the taquitos: Arrange the taquitos in a single layer in the air fryer basket, making sure they do not overlap. Spray the tops of the taquitos lightly with pan spray. Cook for 6-8 minutes, flipping them halfway through the cooking time, until they are golden brown, crispy, and the filling is hot and bubbly. Repeat with remaining taquitos if cooking in batches.
- Serve: Serve the crispy taquitos warm, accompanied by optional toppings such as sour cream, diced tomatoes, fresh lime wedges, and chopped cilantro for added flavor and freshness. Enjoy your delicious appetizer!
Notes
- Warming tortillas before rolling helps prevent cracking during assembly.
- You can use either corn or flour small tortillas according to your preference.
- If you don’t have green chiles, mild diced green peppers can be used as a substitute.
- Spraying the taquitos with pan spray ensures crispiness and prevents sticking in the air fryer.
- For extra spice, add jalapeños or hot sauce to the filling mixture.
- Leftovers can be reheated in the air fryer for a few minutes to restore crispiness.
