Description
Apple Fritter Cake combines the flavors of an apple fritter without frying. This 8×8 cake features a tender batter filled with apple pie filling and topped with a sweet glaze, making it perfect for breakfast, brunch, or dessert.
Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 cup packed brown sugar
- 1/4 cup (2 ounces or 4 tablespoons) unsalted butter, softened
- 1 large egg, room temperature
- 1/4 cup apple butter or applesauce
- 1 teaspoon vanilla extract
- 1/2 cup sour cream or Greek yogurt
- 2 cups apple pie filling
- Glaze:
- 1 cup powdered sugar, sifted
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F. Lightly grease an 8×8 pan with cooking spray.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a large mixing bowl, beat butter and brown sugar on medium-high speed until creamy, about 1–2 minutes.
- Scrape down the bowl and beat in egg, apple butter/applesauce, and vanilla extract.
- On low speed, add flour mixture alternating with sour cream or Greek yogurt, beginning and ending with flour, mixing until just combined.
- Spread half of the batter into the prepared pan. Top with apple pie filling and cover with remaining batter.
- Bake 35–40 minutes or until a toothpick inserted in the center comes out clean.
- While cooling, prepare glaze by whisking powdered sugar, milk, and vanilla. Spread over the warm cake and allow to harden.
- Store covered at room temperature up to 3 days or in the refrigerator up to 5 days.
Notes
- Use homemade or store-bought apple pie filling as preferred.
- For extra flavor, add a sprinkle of cinnamon sugar on top before glazing.
- Ensure the cake has cooled slightly before glazing to avoid a runny glaze.
